504 kitchen is a full-scale 24/7 certified commercial kitchen that offers a wide-range of professional commercial equipment and other amenities that will help you on your culinary path to success. The kitchen is used by some of the best food trucks and food entrepreneurs in the valley as a place to store, create, and prepare food. We pride ourselves in the fact that we are the first stepping stone in your culinary goal. In the future, the kitchen will also be used to test prepared meal recipes using “ugly produce” and other food items, saving them from the landfill.

About Jason Chavez
Jason’s culinary career began early on, inspired by his Nana and Mother and their love and respect for all styles of food. Jason sought opportunities to further educate himself in the culinary field by becoming a butcher at the age of 21 for Hestbecks and Country Time Meats in Fresno Ca. Under the guidance of his mentor Leo Saldano, Jason became a well known butcher in the valley. He furthered his career by attending the Culinary Professional Program at IOT and interning at the famous Max’s Bistro, working for Fatboys Taqueria, then becoming a personal chef. Eventually Jason took on the Kitchen Manager role and become a part of the Food Commons Fresno family.
